From Far Away and Downeast, Recipes from the Maine Refugee Community compiled in the 1980s by the Refugee Resettlement Program in Portland, Maine

 
 

2 cups flour
1 can coconut milk
4 eggs
1 Tbsp. sesame seeds
3 lbs. bananas
1/2 tsp. salt
cooking oil

In one bowl, mix flour, coconut milk, eggs, sesame seeds and salt. Peel each banana and roll in the flour mixture.

In a frying pan, heat cooking oil until it starts steaming (about 400 degrees). Deep fry each banana coated with the flour mixture. Be sure the bananas are browned evenly on all sides. Soak off the excess oil in layers of paper towels. Serve hot.
