Mout Ang (Cambodian Chicken Barbeque)

From Far Away and Downeast, Recipes from the Maine Refugee Community compiled in the 1980s by the Refugee Resettlement Program in Portland, Maine

6 chicken breasts with skin
3 Tbsp. soy sauce
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. sugar or honey
2 Tbsp. scallions, chopped
1 tsp. fresh ginger or powder
3 garlic sections, very finely chopped
4 Tbsp. ketchup

In large bowl, mix all ingredients except chicken. Add chicken. Let stand for 1 hour.

Remove chicken from sauce and broil in oven for about 45 min.

May be barbequed outdoors over grill.

Serves 6.
