Welsh Rarebit
From The Orono Cookbook, by The Ladies of the Methodist Episcopal Church, Orono, Maine • 1906
Take 1/2 pound soft cheese. Break up lightly and put in double boiler with 1 teaspoonful butter, 1/2 cup milk. Stir often, add 1 teaspoonful mustard, 1/4 teaspoonful salt, pinch of cayenne pepper. Beat 2 eggs and stir into the hot milk and cheese. Pour over toast or crackers.
